  • 1 large eggplant diced
  • 1 large zucchini diced
  • 1 large bell pepper diced
  • 1 large onion diced
  • 4 cloves garlic minced
  • 4 large tomatoes diced
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil

Instructions 

  1. 1. Heat the olive oil in a large skillet over medium heat.
  2. 2. Add the onion and garlic, and sauté until softened.
  3. 3. Add the eggplant, zucchini, and bell pepper. Cook until they start to soften.
  4. 4. Stir in the tomatoes, salt, pepper, thyme, and basil. Simmer for about 30 minutes.
  5. 5. Serve hot, optionally garnished with fresh herbs.
