- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell pepper, diced
- 1 cup carrots, shredded
- ¼ cup red onion, thinly sliced
- 2 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon salt
- ½ teaspoon black pepper
1. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, carrots, and red onion.
2. Drizzle with olive oil and lemon juice.
3. Season with salt and black pepper. Toss to combine.
