Ingredients

  • 1 cup dried red beans soaked overnight
  • 1 cup white rice
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 garlic cloves minced
  • 1 green bell pepper chopped
  • 1 celery stalk chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 cups vegetable broth
  • 2 bay leaves

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion, garlic, bell pepper, and celery. Sauté until softened, about 5 minutes.
  3. 3. Add the soaked beans, vegetable broth, thyme, paprika, salt, black pepper, and bay leaves. Bring to a boil.
  4. 4. Reduce heat to low and simmer for about 1 hour, or until beans are tender.
  5. 5. Cook the rice according to package instructions.
  6. 6. Serve the red beans over the cooked rice.
