Ingredients 

Main Ingredients

  • 2 cups Red Bell Peppers chopped
  • 1 cup Onion chopped
  • 3 cloves Garlic minced
  • 2 tablespoon Olive Oil
  • 1 cup Coconut Milk
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 12 oz Pasta your choice of pasta

Instructions 

  1. 1. Cook pasta according to package instructions. Drain and set aside.
  2. 2. In a skillet, heat olive oil over medium heat. Add chopped onions and garlic, sauté until translucent.
  3. 3. Add chopped red bell peppers to the skillet and cook until softened.
  4. 4. Transfer the cooked vegetables to a blender. Add coconut milk, salt, and black pepper. Blend until smooth.
  5. 5. Pour the sauce back into the skillet and simmer for a few minutes to thicken.
  6. 6. Toss the cooked pasta in the sauce until well coated. Serve hot.
