Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add chopped red bell peppers and tomatoes, cook for another 5 minutes.
Pour in vegetable broth, add salt and black pepper. Bring to a boil.
Reduce heat and let it simmer for 20 minutes.
Blend the soup until smooth using a blender.
Serve hot.
