Ingredients 

Main Ingredients

  • 2 tablespoon Olive oil
  • 1 Onion, chopped
  • 2 Red bell peppers, chopped
  • 4 Tomatoes, chopped
  • 3 cups Vegetable broth
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add chopped red bell peppers and tomatoes, cook for another 5 minutes.
  4. Pour in vegetable broth, add salt and black pepper. Bring to a boil.
  5. Reduce heat and let it simmer for 20 minutes.
  6. Blend the soup until smooth using a blender.
  7. Serve hot.
