Ingredients 

Main Ingredients

  • 6 medium red-skinned potatoes washed and diced
  • ½ cup vegan mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoon apple cider vinegar
  • 2 stalks celery chopped
  • ¼ cup red onion finely chopped
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • 2 tablespoon fresh dill chopped

Instructions 

  1. 1. Place the diced potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a mixing bowl, combine vegan mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper.
  3. 3. Add the cooled potatoes, celery, red onion, and fresh dill to the bowl. Mix well to combine.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
