  • 4 cups rhubarb, chopped
  • 1 cup sugar
  • 1 cup flour
  • ½ cup rolled oats
  • ½ cup brown sugar
  • ½ cup vegan butter, melted
  • 1 teaspoon cinnamon

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix rhubarb and sugar. Spread in a baking dish.
  3. In another bowl, combine flour, oats, brown sugar, vegan butter, and cinnamon. Sprinkle over rhubarb.
  4. Bake for 40 minutes until golden and bubbly.
