Instructions
1. Heat olive oil in a saucepan over medium heat.
2. Add chopped onion and sauté until translucent.
3. Add mixed vegetables and cook for another 5 minutes.
4. Stir in the basmati rice, raisins, salt, pepper, and turmeric.
5. Pour in the vegetable broth and bring to a boil.
6. Reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked.
7. Fluff with a fork and serve warm.
