Ingredients 

Main Ingredients

  • 1 cup Basmati rice
  • 2 tablespoon Olive oil
  • 1 medium Onion, chopped
  • 1 cup Mixed vegetables (carrots, peas, bell peppers), chopped
  • ½ cup Raisins
  • 2 cups Vegetable broth
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • ½ teaspoon Turmeric

Instructions 

  1. 1. Heat olive oil in a saucepan over medium heat.
  2. 2. Add chopped onion and sauté until translucent.
  3. 3. Add mixed vegetables and cook for another 5 minutes.
  4. 4. Stir in the basmati rice, raisins, salt, pepper, and turmeric.
  5. 5. Pour in the vegetable broth and bring to a boil.
  6. 6. Reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked.
  7. 7. Fluff with a fork and serve warm.
