Ingredients 

Main Ingredients

  • 2 cups cherry tomatoes
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, sliced
  • 1 red onion, chopped
  • 3 tablespoon olive oil
  • 2 tablespoon balsamic vinegar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried oregano

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine all vegetables.
  3. Add olive oil, balsamic vinegar, salt, pepper, and oregano. Toss to coat.
  4. Spread vegetables on a baking sheet.
  5. Roast for 30 minutes, stirring halfway through.
