  • 4 medium beets peeled and cut into wedges

  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground
  • 4 cups mixed greens
  • ½ cup goat cheese crumbled
  • ¼ cup walnuts toasted
  • 2 tablespoon balsamic vinegar

Instructions

  2. 2. Toss the beet wedges with olive oil, salt, and pepper. Spread them out on a baking sheet.
  3. 3. Roast the beets in the preheated oven for 35-45 minutes, or until they are tender and slightly caramelized. Let them cool.
  4. 4. In a large mixing bowl, combine the mixed greens, roasted beets, crumbled goat cheese, and toasted walnuts.
  5. 5. Drizzle with balsamic vinegar and toss gently to combine.
