Main Ingredients
- 1 head Cauliflower cut into florets
- 2 tablespoon Olive Oil
- 1 teaspoon Chili Powder
- 1 teaspoon Cumin
- 1 teaspoon Garlic Powder
- 1 teaspoon Salt
- 8 pieces Tortillas corn or flour
Toppings
- 1 cup Cabbage shredded
- 1 cup Pico de Gallo
- 1 cup Avocado sliced
- 0.5 cup Cilantro chopped
Preheat oven to 425°F (220°C).
In a mixing bowl, toss cauliflower florets with olive oil, chili powder, cumin, garlic powder, and salt.
Spread cauliflower on a baking sheet and roast for 25 minutes, until tender and slightly charred.
Warm tortillas in a dry skillet over medium heat.
Assemble tacos by placing roasted cauliflower on tortillas and adding desired toppings.
