Roasted Garlic Mashed Potatoes
Delicious vegan mashed potatoes with roasted garlic.

Main Ingredients
- 2 lbs potatoes peeled and chopped
- 1 head garlic
- 2 tablespoon olive oil
- 1 cup unsweetened almond milk
- Salt and pepper to taste
Preheat oven to 400°F (200°C).
Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30 minutes.
Boil potatoes in salted water until tender, about 15 minutes.
Drain potatoes and return to pot.
Squeeze roasted garlic into potatoes, add almond milk, salt, and pepper.
Mash until smooth and creamy.
