  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, sliced
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano

Instructions 

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, combine all vegetables.
  3. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and oregano.
  4. Toss to coat evenly.
  5. Spread vegetables on a baking sheet in a single layer.
  6. Roast for 25-30 minutes, stirring halfway through, until vegetables are tender and slightly browned.
