- 2 cups broccoli florets
- 2 cups cauliflower florets
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 zucchini, sliced
- 2 tablespoon olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
Preheat oven to 425°F (220°C).
In a large bowl, combine all vegetables.
Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and oregano.
Toss to coat evenly.
Spread vegetables on a baking sheet in a single layer.
Roast for 25-30 minutes, stirring halfway through, until vegetables are tender and slightly browned.
