Ingredients

  • 1 small Pumpkin peeled and cubed
  • 2 medium Carrots peeled and sliced
  • 2 medium Parsnips peeled and sliced
  • 1 head Broccoli cut into florets
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the pumpkin, carrots, parsnips, and broccoli.
  3. Drizzle with olive oil, and season with salt and pepper. Toss to coat evenly.
  4. Spread the vegetables out on a baking sheet in a single layer.
  5. Roast in the preheated oven for 45 minutes, or until the vegetables are tender and golden brown.
  6. Serve warm and enjoy!
