Roasted Pumpkin with Root Vegetables and Broccoli

Main Ingredients
- 1 small Pumpkin peeled and cubed
- 2 medium Carrots peeled and sliced
- 2 medium Parsnips peeled and sliced
- 1 head Broccoli cut into florets
- 2 tablespoon Olive oil
- 1 teaspoon Salt
- ½ teaspoon Black pepper
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the pumpkin, carrots, parsnips, and broccoli.
Drizzle with olive oil, and season with salt and pepper. Toss to coat evenly.
Spread the vegetables out on a baking sheet in a single layer.
Roast in the preheated oven for 45 minutes, or until the vegetables are tender and golden brown.
Serve warm and enjoy!
