Main Ingredients
- 1 rack lamb about 8 ribs
- 2 tablespoon olive oil
- 4 cloves garlic minced
- 1 tablespoon fresh rosemary chopped
- 1 teaspoon salt
- 0.5 teaspoon black pepper freshly ground
Preheat your oven to 450°F (230°C).
In a small bowl, mix together olive oil, garlic, rosemary, salt, and pepper.
Rub the mixture all over the lamb rack.
Place the lamb rack in a roasting pan, bone side down.
Roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
Remove from the oven and let it rest for 10 minutes before carving.
