Ingredients

  • 1 rack lamb about 8 ribs
  • 2 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper freshly ground

Instructions 

  1. Preheat your oven to 450°F (230°C).
  2. In a small bowl, mix together olive oil, garlic, rosemary, salt, and pepper.
  3. Rub the mixture all over the lamb rack.
  4. Place the lamb rack in a roasting pan, bone side down.
  5. Roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  6. Remove from the oven and let it rest for 10 minutes before carving.
