  • 4 carrots, peeled and chopped
  • 2 parsnips, peeled and chopped
  • 1 sweet potato, peeled and chopped
  • 1 red onion, peeled and quartered
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss all the vegetables with olive oil, salt, pepper, and thyme.
  3. Spread the vegetables in a single layer on a baking sheet.
  4. Roast for 40 minutes, stirring halfway through, until vegetables are tender and golden brown.
