Roasted Sweet Potatoes and Vegetables

- 2 large Sweet Potatoes peeled and cubed
- 1 cup Broccoli Florets
- 1 cup Bell Peppers sliced
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 1 teaspoon Garlic Powder
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine sweet potatoes, broccoli, and bell peppers.
Drizzle with olive oil and sprinkle with salt, black pepper, and garlic powder. Toss to coat.
Spread the vegetables evenly on a baking sheet.
Roast in the preheated oven for 40 minutes, stirring halfway through, until vegetables are tender and slightly browned.
