Ingredients 

Main Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, chopped
  • 1 red onion, chopped
  • 2 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 avocado, sliced
  • Fresh parsley for garnish

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Rinse quinoa under cold water. In a pot, bring water to a boil, add quinoa, reduce heat, cover, and simmer for 15 minutes.
  3. On a baking sheet, toss bell peppers, zucchini, and onion with olive oil, salt, pepper, garlic powder, and paprika. Roast for 20-25 minutes.
  4. Fluff quinoa with a fork and divide into bowls. Top with roasted vegetables, avocado slices, and garnish with parsley.
