Ingredients 

Vegetables

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 large carrot, sliced
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine broccoli, cauliflower, carrot, and bell pepper.
  3. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and thyme.
  4. Toss to coat evenly.
  5. Spread vegetables in a single layer on a baking sheet.
  6. Roast in preheated oven for 30 minutes, stirring halfway through.
  7. Serve warm.
