- 2 cups broccoli florets
- 2 cups cauliflower florets
- 1 large carrot, sliced
- 2 tablespoon olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
Preheat oven to 400°F (200°C).
In a large bowl, combine broccoli, cauliflower, carrot, and bell pepper.
Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and thyme.
Toss to coat evenly.
Spread vegetables in a single layer on a baking sheet.
Roast in preheated oven for 30 minutes, stirring halfway through.
Serve warm.
