Roasted Vegetables with Walnuts Recipe

- 2 cups broccoli florets
- 2 cups cauliflower florets
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 zucchini, sliced
- 1 red onion, chopped
- 3 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup walnuts, chopped
Preheat oven to 400°F (200°C).
In a large bowl, toss all vegetables with olive oil, salt, and pepper.
Spread the vegetables on a baking sheet.
Roast for 25-30 minutes, stirring halfway through.
Sprinkle walnuts over the vegetables and roast for an additional 5 minutes.
