Ingredients 

Vegetables

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, sliced
  • 1 red onion, chopped
  • 3 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup walnuts, chopped

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss all vegetables with olive oil, salt, and pepper.
  3. Spread the vegetables on a baking sheet.
  4. Roast for 25-30 minutes, stirring halfway through.
  5. Sprinkle walnuts over the vegetables and roast for an additional 5 minutes.
