Ingredients 

Main Ingredients

  • 2 cups chopped sweet potatoes
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cooked quinoa
  • ¼ cup hummus
  • 1 tablespoon lemon juice

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the sweet potatoes, broccoli, and bell peppers with olive oil, salt, and black pepper.
  3. Spread the veggies on a baking sheet and roast for 25-30 minutes, until tender and slightly crispy.
  4. While the veggies are roasting, prepare the quinoa according to package instructions.
  5. Assemble the Buddha bowls by dividing the quinoa, roasted veggies, hummus, and lemon juice among four bowls.
  6. Serve immediately and enjoy!
