  • 2 large carrots peeled and chopped
  • 2 large parsnips peeled and chopped
  • 1 large sweet potato peeled and chopped
  • 1 large red onion peeled and quartered
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the carrots, parsnips, sweet potato, and red onion with olive oil, salt, pepper, thyme, and rosemary.
  3. Spread the vegetables in a single layer on a baking sheet.
  4. Roast in the preheated oven for 45 minutes, stirring halfway through, until the vegetables are tender and golden brown.
