Main Ingredients
- 2 large carrots peeled and chopped
- 2 large parsnips peeled and chopped
- 1 large sweet potato peeled and chopped
- 1 large red onion peeled and quartered
- 3 tablespoons olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
Preheat your oven to 400°F (200°C).
In a large bowl, toss the carrots, parsnips, sweet potato, and red onion with olive oil, salt, pepper, thyme, and rosemary.
Spread the vegetables in a single layer on a baking sheet.
Roast in the preheated oven for 45 minutes, stirring halfway through, until the vegetables are tender and golden brown.
