- 2 cups all-purpose flour
- 0.5 teaspoon baking powder
- 0.25 teaspoon salt
- 0.5 cup vegan butter, softened
- 1 cup granulated sugar
- 0.25 cup unsweetened applesauce
- 1 teaspoon vanilla extract
Preheat oven to 350°F (175°C).
In a bowl, whisk together flour, baking powder, and salt.
In another bowl, beat vegan butter and sugar until creamy.
Add applesauce and vanilla to the butter mixture and mix well.
Gradually add dry ingredients to wet ingredients, mixing until combined.
Roll dough out on a floured surface to about ¼ inch thickness.
Cut into shapes with cookie cutters and place on a baking sheet.
Bake for 8-10 minutes or until edges are lightly golden.
Let cool on a wire rack.
