Ingredients

  • 2 cups Carrots, chopped
  • 2 cups Parsnips, chopped
  • 2 cups Sweet Potatoes, chopped
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Thyme, dried

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the chopped carrots, parsnips, and sweet potatoes.
  3. Drizzle with olive oil and sprinkle with salt, pepper, and thyme. Toss to coat evenly.
  4. Transfer the vegetables to a baking dish and spread them out in an even layer.
  5. Bake in the preheated oven for 45 minutes, or until the vegetables are tender and golden brown, stirring halfway through.
  6. Remove from the oven and let cool slightly before serving.
