Ingredients

  • 2 cups boiled potatoes, diced
  • 1 cup boiled carrots, diced
  • 1 cup boiled peas
  • 1 cup boiled green beans, chopped
  • 1 cup vegan mayonnaise
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon lemon juice

Instructions 

  1. In a large bowl, combine the boiled potatoes, carrots, peas, and green beans.
  2. Add the vegan mayonnaise, salt, pepper, and lemon juice.
  3. Mix everything well until all the vegetables are coated with the mayonnaise.
  4. Chill in the refrigerator for at least an hour before serving.
