Ingredients 

Main Ingredients

  • 1 cup Quinoa
  • 2 cups Vegetable Broth
  • 1 tablespoon Olive Oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Carrots, diced
  • 1 cup Frozen Peas
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. Rinse quinoa under cold water.
  2. 2. In a saucepan, bring vegetable broth to a boil. Add quinoa, reduce heat, and simmer for 15 minutes.
  3. 3. In a frying pan, heat olive oil over medium heat. Add chopped onion and garlic, sauté until soft.
  4. 4. Add diced carrots to the pan and cook for another 5 minutes.
  5. 5. Stir in cooked quinoa, frozen peas, soy sauce, ground cumin, ground coriander, salt, and black pepper. Cook for another 5 minutes.
  6. 6. Serve hot.
