Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 carrots, chopped
  • 1 zucchini, chopped
  • 1 cup corn kernels
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add bell pepper, carrots, and zucchini, cook for 5 minutes.
  4. Stir in corn, black beans, diced tomatoes, vegetable broth, and salsa.
  5. Add cumin, chili powder, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Garnish with fresh cilantro before serving.
