Instructions
Heat olive oil in a large pot over medium heat.
Add onion and garlic, sauté until softened.
Add bell pepper, carrots, and zucchini, cook for 5 minutes.
Stir in corn, black beans, diced tomatoes, vegetable broth, and salsa.
Add cumin, chili powder, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 20 minutes.
Garnish with fresh cilantro before serving.
