Sausage Potato and Kale Soup Recipe
A hearty and comforting vegan soup with sausage, potatoes, and kale.

Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 4 potatoes, diced
- 2 vegan sausages, sliced
- 4 cups kale, chopped
- 1 teaspoon salt
- ½ teaspoon black pepper
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic, sauté until translucent.
Add vegetable broth and diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
Add sliced vegan sausages and chopped kale. Cook for another 5-10 minutes until kale is wilted and sausages are heated through.
Season with salt and black pepper to taste. Serve hot.
