Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 4 potatoes, diced
  • 2 vegan sausages, sliced
  • 4 cups kale, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Add vegetable broth and diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  4. Add sliced vegan sausages and chopped kale. Cook for another 5-10 minutes until kale is wilted and sausages are heated through.
  5. Season with salt and black pepper to taste. Serve hot.
