Instructions
Heat olive oil in a large pot over medium heat.
Add diced onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Pour in vegetable broth and bring to a boil.
Add diced potatoes and cook until tender, about 10-15 minutes.
Stir in corn kernels, coconut milk, Old Bay seasoning, salt, and black pepper.
Simmer for another 10 minutes, stirring occasionally.
Serve hot and enjoy!
