Main Ingredients
- 4 carrots, peeled and chopped
- 2 parsnips, peeled and chopped
- 2 sweet potatoes, peeled and chopped
- 1 red onion, chopped
- 3 tablespoon olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
Preheat oven to 400°F (200°C).
In a large bowl, combine all the vegetables.
Drizzle with olive oil and sprinkle with salt, pepper, thyme, and rosemary.
Toss to coat evenly.
Spread the vegetables in a single layer on a baking sheet.
Roast for 40 minutes, stirring halfway through, until vegetables are tender and golden brown.
