  • 4 carrots, peeled and chopped
  • 2 parsnips, peeled and chopped
  • 2 sweet potatoes, peeled and chopped
  • 1 red onion, chopped
  • 3 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine all the vegetables.
  3. Drizzle with olive oil and sprinkle with salt, pepper, thyme, and rosemary.
  4. Toss to coat evenly.
  5. Spread the vegetables in a single layer on a baking sheet.
  6. Roast for 40 minutes, stirring halfway through, until vegetables are tender and golden brown.
