Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon Old Bay seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add onion, garlic, celery, and carrots. Cook until softened, about 10 minutes.
  3. 3. Add vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  4. 4. Stir in coconut milk, Old Bay seasoning, salt, and black pepper. Simmer for another 5 minutes.
  5. 5. Use a blender to puree the soup until smooth.
  6. 6. Serve hot.
