Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion, garlic, celery, and carrots. Cook until softened, about 10 minutes.
3. Add vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
4. Stir in coconut milk, Old Bay seasoning, salt, and black pepper. Simmer for another 5 minutes.
5. Use a blender to puree the soup until smooth.
6. Serve hot.
