  • 2 large Eggplants cut into cubes
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the eggplant cubes, olive oil, salt, black pepper, garlic powder, and paprika. Toss well to coat.
  3. Spread the eggplant mixture evenly on a sheet pan.
  4. Roast in the preheated oven for 30 minutes, stirring halfway through, until the eggplant is golden brown and tender.
  5. Remove from the oven and serve hot.
