Instructions
In a large bowl, combine hearts of palm, artichoke hearts, celery, red bell pepper, red onion, and parsley.
In a small bowl, mix vegan mayonnaise, lemon juice, Old Bay seasoning, salt, and pepper.
Pour the dressing over the salad and toss to combine.
Chill in the refrigerator for at least 30 minutes before serving.
