Ingredients 

Main Ingredients

  • 1 cup hearts of palm chopped
  • 1 cup artichoke hearts chopped
  • ½ cup celery diced
  • ½ cup red bell pepper diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh parsley chopped
  • ¼ cup vegan mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper to taste

Instructions 

  1. In a large bowl, combine hearts of palm, artichoke hearts, celery, red bell pepper, red onion, and parsley.
  2. In a small bowl, mix vegan mayonnaise, lemon juice, Old Bay seasoning, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.
