Ingredients

  • 1 cup Vegan shrimp
  • 1 cup Cooked rice
  • 1 cup Black beans drained and rinsed
  • 1 cup Corn kernels
  • 1 cup Diced tomatoes
  • 1 cup Shredded lettuce
  • 4 large Flour tortillas
  • 1 tablespoon Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt

Instructions 

  1. 1. Heat the olive oil in a pan over medium heat.
  2. 2. Add the vegan shrimp, chili powder, cumin, garlic powder, and salt. Cook for 5-7 minutes until heated through.
  3. 3. Warm the tortillas in a separate pan or microwave.
  4. 4. Assemble the burritos by layering rice, black beans, corn, tomatoes, lettuce, and cooked vegan shrimp on each tortilla.
  5. 5. Roll up the tortillas, folding in the sides as you go.
  6. 6. Serve immediately and enjoy!
