Sicilian Grilled Vegetable Salad
A delicious and healthy vegan salad featuring grilled vegetables with a Sicilian twist.

Vegetables
- 1 eggplant, sliced
- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 tablespoon olive oil
- Salt and pepper to taste
- 2 tablespoon balsamic vinegar
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh parsley
Preheat grill to medium-high heat.
Brush vegetables with olive oil and season with salt and pepper.
Grill vegetables for 4-5 minutes per side until tender and charred.
Remove from grill and let cool slightly.
Chop grilled vegetables into bite-sized pieces.
In a large bowl, combine grilled vegetables, balsamic vinegar, basil, and parsley.
Toss to coat and serve.
