Ingredients 

Vegetables

  • 1 eggplant, sliced
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 tablespoon olive oil
  • Salt and pepper to taste
  • 2 tablespoon balsamic vinegar
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh parsley

Instructions 

  1. Preheat grill to medium-high heat.
  2. Brush vegetables with olive oil and season with salt and pepper.
  3. Grill vegetables for 4-5 minutes per side until tender and charred.
  4. Remove from grill and let cool slightly.
  5. Chop grilled vegetables into bite-sized pieces.
  6. In a large bowl, combine grilled vegetables, balsamic vinegar, basil, and parsley.
  7. Toss to coat and serve.
