Ingredients 

Main Ingredients

  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 large carrots, chopped
  • 4 large potatoes, chopped
  • 2 cups vegetable broth
  • 1 cup red wine (optional)
  • 2 tablespoon tomato paste
  • 2 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions 

  1. Place the chopped onion, garlic, carrots, and potatoes in the slow cooker.
  2. In a bowl, mix the vegetable broth, red wine (if using), tomato paste, soy sauce, thyme, rosemary, salt, and pepper.
  3. Pour the mixture over the vegetables in the slow cooker.
  4. Cover and cook on low for 8 hours or until vegetables are tender.
  5. Serve hot.
