Slow Cooker Potato Soup Recipe
A hearty and comforting vegan potato soup made in the slow cooker.

Main Ingredients
- 6 cups Potatoes, peeled and diced
- 1 cup Carrots, diced
- 1 cup Celery, diced
- 1 cup Onion, diced
- 4 cups Vegetable broth
- 1 cup Coconut milk
- 2 cloves Garlic, minced
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 1 teaspoon Thyme
1. Add potatoes, carrots, celery, onion, garlic, vegetable broth, salt, pepper, and thyme to the slow cooker.
2. Cover and cook on low for 8 hours or until vegetables are tender.
3. Stir in coconut milk and cook for an additional 30 minutes.
4. Use an immersion blender to blend the soup to your desired consistency.
5. Serve hot and enjoy!
