Ingredients 

Main Ingredients

  • 3 leeks, cleaned and sliced
  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper to taste
  • 2 tablespoon olive oil

Instructions 

  1. Heat olive oil in a pan over medium heat. Add onions and garlic, sauté until soft.
  2. Add leeks and cook for another 5 minutes.
  3. Transfer the mixture to a slow cooker. Add potatoes, vegetable broth, salt, and pepper.
  4. Cook on low for 6 hours.
  5. Stir in coconut milk and blend the soup until smooth.
  6. Adjust seasoning if needed and serve hot.
