Slow Cooker Vegan Leek and Potato Soup

Main Ingredients
- 3 leeks, cleaned and sliced
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- Salt and pepper to taste
- 2 tablespoon olive oil
Heat olive oil in a pan over medium heat. Add onions and garlic, sauté until soft.
Add leeks and cook for another 5 minutes.
Transfer the mixture to a slow cooker. Add potatoes, vegetable broth, salt, and pepper.
Cook on low for 6 hours.
Stir in coconut milk and blend the soup until smooth.
Adjust seasoning if needed and serve hot.
