Ingredients 

Main Ingredients

  • 1 cup Vegan butter
  • 1.5 cups Sugar
  • 1 tablespoon Ground flaxseed mixed with 3 tablespoon water
  • 1 teaspoon Vanilla extract
  • 2.5 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 2 teaspoon Cream of tartar
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Salt

Instructions 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the vegan butter and 1 cup of sugar until light and fluffy.
  3. Add the flaxseed mixture and vanilla extract, and mix well.
  4. In a separate bowl, whisk together the flour, baking soda, cream of tartar, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a small bowl, combine the remaining ½ cup of sugar and 1 teaspoon of cinnamon.
  7. Roll the dough into 1-inch balls, then roll each ball in the cinnamon-sugar mixture to coat.
  8. Place the dough balls on the prepared baking sheet, about 2 inches apart.
  9. Bake for 8-10 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
