Soba Noodle Salad Recipe

Main Ingredients
- 200 g soba noodles
- 1 carrot, julienned
- 1 cucumber, julienned
- 2 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon maple syrup
- 1 tablespoon sesame seeds
- 2 green onions, chopped
Cook soba noodles according to package instructions. Drain and rinse under cold water.
In a mixing bowl, whisk together soy sauce, sesame oil, rice vinegar, and maple syrup.
Add cooked soba noodles, carrot, cucumber, and green onions to the bowl. Toss to combine.
Sprinkle with sesame seeds before serving.
