Instructions
Preheat oven to 350°F (175°C).
In a large bowl, mix oats, flour, baking soda, and salt.
In another bowl, combine melted coconut oil, brown sugar, almond milk, and vanilla extract.
Pour wet ingredients into dry ingredients and mix until combined.
Fold in raisins if using.
Drop spoonfuls of dough onto a baking sheet.
Bake for 10 minutes or until edges are golden brown.
Let cool on a wire rack.
