Instructions
Heat olive oil in a pot over medium heat. Add onion and garlic, cook until softened.
Add fideos and cook until golden brown.
Stir in vegetable broth, diced tomatoes, and cumin. Bring to a boil.
Reduce heat and simmer for 15 minutes. Season with salt and pepper.
Serve hot, garnished with cilantro and lime wedges.
