Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup fideos or broken spaghetti
  • 4 cups vegetable broth
  • 1 can diced tomatoes 14.5 oz
  • 1 teaspoon ground cumin
  • to taste salt and pepper
  • ¼ cup chopped cilantro
  • 1 lime, cut into wedges

Instructions 

  1. Heat olive oil in a pot over medium heat. Add onion and garlic, cook until softened.
  2. Add fideos and cook until golden brown.
  3. Stir in vegetable broth, diced tomatoes, and cumin. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes. Season with salt and pepper.
  5. Serve hot, garnished with cilantro and lime wedges.
