Main Ingredients
- 4 cups Yellow Squash, sliced about 2 medium squashes
- 1 cup Onion, chopped
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- ½ cup Breadcrumbs use vegan breadcrumbs
- ¼ cup Nutritional Yeast
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the sliced yellow squash, chopped onion, olive oil, salt, and black pepper. Mix well.
Transfer the mixture to a baking dish and spread it out evenly.
Sprinkle the breadcrumbs and nutritional yeast evenly over the top.
Bake in the preheated oven for 30 minutes, or until the squash is tender and the top is golden brown.
Remove from the oven and let it cool for a few minutes before serving.
