Ingredients

  • 2 cups chopped collard greens
  • 1 cup diced tomatoes
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, sauté until translucent.
  3. Add tomatoes and cook for another 5 minutes.
  4. Add collard greens and vegetable broth.
  5. Season with salt and pepper.
  6. Cover and simmer for 20-25 minutes until greens are tender.
