  • 1 can black beans drained and rinsed
  • 1 cup corn kernels
  • 1 red bell pepper diced
  • 1 avocado diced
  • ½ cup cherry tomatoes halved
  • ¼ cup red onion finely chopped
  • ¼ cup fresh cilantro chopped
  • 1 lime juiced
  • 2 tablespoon olive oil
  • Salt and pepper to taste

Instructions 

  1. In a large bowl, combine black beans, corn, bell pepper, avocado, cherry tomatoes, red onion, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately or refrigerate for later.
