Main Ingredients
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 stalk celery, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 1 can crushed tomatoes (14 oz)
- 1 can tomato sauce (14 oz)
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- to taste Salt and pepper
- 1 lb spaghetti
Heat olive oil in a large pan over medium heat.
Add onion and garlic, sauté until translucent.
Add carrot, celery, bell pepper, zucchini, and mushrooms. Cook until vegetables are tender.
Stir in crushed tomatoes, tomato sauce, and tomato paste.
Add oregano, basil, salt, and pepper. Simmer for 20 minutes.
Cook spaghetti according to package instructions.
Serve sauce over spaghetti.
