Instructions
Heat olive oil in a large pot over medium heat.
Add minced garlic and chopped onion. Sauté until fragrant and translucent.
Add sliced carrots and celery. Cook for another 5 minutes.
Add chopped zucchini and cook for 3 more minutes.
Pour in vegetable broth and bring to a boil.
Reduce heat and simmer for 15 minutes.
Stir in smoked paprika, salt, and black pepper.
Add chopped kale and cook for another 5 minutes.
Serve hot and enjoy!
