Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 8 cloves garlic minced
  • 1 large onion chopped
  • 2 medium carrots sliced
  • 2 stalks celery sliced
  • 1 large zucchini chopped
  • 4 cups vegetable broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • 1 cup kale chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add minced garlic and chopped onion. Sauté until fragrant and translucent.
  3. Add sliced carrots and celery. Cook for another 5 minutes.
  4. Add chopped zucchini and cook for 3 more minutes.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and simmer for 15 minutes.
  7. Stir in smoked paprika, salt, and black pepper.
  8. Add chopped kale and cook for another 5 minutes.
  9. Serve hot and enjoy!
