Ingredients 

Main Ingredients

  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste
  • 8 pieces taco shells
  • 1 cup salsa for serving
  • 1 cup avocado diced, for serving

Instructions 

  1. 1. Heat olive oil in a skillet over medium heat.
  2. 2. Add black beans and corn to the skillet. Cook for 5-7 minutes, stirring occasionally.
  3. 3. Add chili powder, cumin, garlic powder, onion powder, salt, and pepper. Stir well to combine. Cook for another 2-3 minutes.
  4. 4. Warm taco shells according to package instructions.
  5. 5. Fill taco shells with the black bean and corn mixture. Top with salsa and diced avocado. Serve immediately.
