Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon chili flakes
  • 1 can diced tomatoes (400g)
  • 1 can chickpeas, drained and rinsed (400g)
  • 4 cups fresh spinach
  • 2 cups vegetable broth
  • Salt and pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Stir in cumin, coriander, turmeric, and chili flakes. Cook for 1 minute.
  4. Add diced tomatoes, chickpeas, and vegetable broth. Bring to a simmer.
  5. Cook for 20 minutes, stirring occasionally.
  6. Add spinach and cook until wilted. Season with salt and pepper.
