Spicy Chickpea and Spinach Stew

Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 0.5 teaspoon ground turmeric
- 0.5 teaspoon chili flakes
- 1 can diced tomatoes (400g)
- 1 can chickpeas, drained and rinsed (400g)
- 4 cups fresh spinach
- 2 cups vegetable broth
- Salt and pepper to taste
Heat olive oil in a large pot over medium heat.
Add onion and garlic, sauté until softened.
Stir in cumin, coriander, turmeric, and chili flakes. Cook for 1 minute.
Add diced tomatoes, chickpeas, and vegetable broth. Bring to a simmer.
Cook for 20 minutes, stirring occasionally.
Add spinach and cook until wilted. Season with salt and pepper.
