Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 can chickpeas, drained and rinsed 15 oz
  • 1 can diced tomatoes 14.5 oz
  • 1 can coconut milk 14 oz
  • 2 cups fresh spinach
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 0.5 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions 

  1. Heat olive oil in a large pan over medium heat. Add onion and cook until soft.
  2. Add garlic and ginger, cook for another minute.
  3. Stir in curry powder, cumin, turmeric, and cayenne pepper. Cook for 1 minute.
  4. Add chickpeas, diced tomatoes, and coconut milk. Bring to a simmer.
  5. Cook for 10 minutes, then add spinach. Cook until wilted.
  6. Season with salt and pepper to taste.
